The volcanic soil, naturally enriched with essential minerals, provides the perfect foundation for robust, nutrient-rich coffee plants. Every cherry is handpicked at peak ripeness, ensuring only the brightest red, sugar-rich fruit is selected for processing. Immediately after harvest, our beans undergo honey wash processing, where only part of the coffee cherry pulp is removed, allowing the beans to absorb natural sugars during fermentation. This technique creates a sweet, syrupy flavor profile with exceptional clarity. Following processing, the beans are slow-dried on raised beds for 1–2 weeks, a method that prevents over-fermentation, mold, or uneven drying. Each batch is then small-batch roasted to a precise light-medium profile, striking the perfect balance between preserving delicate flavor notes and maintaining optimal caffeine content. After roasting, the beans are immediately cooled and sealed in airtight, one-way valve bags to lock in freshness and prevent oxygen exposure.
